Hearts

This is the stage of the distillation that produces the desired product – ethanol. The hearts should make up around 40% of the distillate, and can be identified by the change in smell as the solvent-like aroma of the acetone is replaced by the sweeter smell of ethanol. This is a game of the senses. A skilful distiller is able to maximize the amount of hearts captured by quickly identifying these shifts in smell, texture and taste.

Tails

The last 30–35% of a still run is known as the tails. Again, you will need to use your senses to recognize the changes in the products you are capturing. The shift from hearts to tails is accompanied by an oily film that collects on the surface of the distillate and a burnt, smoky smell and taste. The tails contain proteins and carbohydrates from your wash that you do not want in your final product.

Whichever type of still you have used, the hearts that you will have collected from your run will be between 75 and 95% ABV. This product needs to be stored in a suitably sized glass or food-grade plastic container with a good seal, as the alcohol evaporates easily and is highly volatile. It must be kept in a safe place, away from any sources of open flame, as it is very flammable.
